Isn’t Easy Being a Nut

Peanut butter. Cashew butter. Sunflower seed butter. Almond butter. Do I sound like that guy from Best in Show? There are dozens of varieties of butter at the grocery store. I’ve shared before that I like to make my own nut butters thanks to the ultra-powerful Vitamix that lives in my kitchen.

Pecan butter

But this concoction is truly my favorite treat. It features a nut butter you can’t readily find on the shelf at your local market. Pecan butter. Warm and toasty, pecans have taken over the top spot on my very official list of “Best Nuts of All Time.” This treat is also spiked with chocolate and cinnamon flavor without being bogged down by boatloads of sugar like lots of commercially available flavored nut butters.

Toasted Pecans

Honey in Vitamix

I toast raw pecans until they are fragrant and golden and then blend them up with cocoa, cinnamon, honey, coconut oil and salt.

Blending pecan butter

The butter is delicious with apple slices but I imagine it would be over the top good slathered on some shortbread.

Apples and pecan butter

And in case you were wondering, it was the humble cashew that got knocked out of the top spot by the pecan. It isn’t easy being a nut.

    • Hi Melissa! I store all of my nut butters in the fridge and they do fine for a couple of weeks…although this one rarely lasts this long! I think it would be perfect for a hostess gift! Thanks for reading 🙂
